Something so easy and really tasty is tofu pizza - press some tofu, cut it into a few sheets, add to a pan with some oil, spread salt free tomato sauce, and sprinkle with nutritional yeast

Pasta marinara, black bean burger, pancakes, oatmeal, roasted potatoes, mashed potatoes, baked bbq tofu, baked beans, Mac n cheese, pasta Alfredo (using cashews). Just google “vegan __fill in the blank__” and you can get lots of recipes to try.
