I love to roast a whole chicken over veggies and usually have it with crusty bread. I save the juice at the bottom for a base of a soup, take off all the extra meat for chicken salad and then freeze the bones and extra bits for making broth (3 chickens makes a good batch in my crockpot). The chicken recipe I learned from this video https://youtu.be/Pg12gBbQ0us?si=Xzs41-EXGtt1p_Yc but I just changed it to not have the leaks, I usually do carrot and potatoes but you can put most any tough veggie on the bottom and it is similar to a beef roast. Really easy and versatile. I also am not making the other things in her recipe, just the chicken aspect.

Kind of depends on what u like. Pasta? Mexican? American? One dish?

I like them all. I grew up eating a variety of different ethic foods like Mexican, Indian, Thai, Chinese, Mediterranean, Italian, French, Russian & Japanese food.
But I tend to lean more towards Italian and Mexican foods.

Lately I've been in my Asian/Chinese bag. I made some bourbon chicken, Jasmine rice, and stir Fry veggies last week and honestly homemade is better than getting it out

Baked Ziti, Chicken Parm, Taquitos, Tostadas, Chicken Cutlet with Arroz con Gandules its puerto rican but its sooooo good.

Lately i been making baked chicken with peppers & onions on top on 350 degrees for 1-2 hours add a little olive oil with a side of rice & beans they kids love it

I’ve never heard of chicken cutlet with arroz con gandules. What is a good recipe you use?

I don’t unfortunately. I use too but I left it in OR when I moved to TX

We love making pot roast in the crockpot mostly when we are low on money and tight on time! Always a life saver!
