My son eats whatever I'm cooking for dinner. Usually some sort of pasta, veggies, and either chicken, steak, or beans/chickpeas as protein. For daycare lunches/snacks I pack him yogurt, cheese, applesauce, cheerios, fruit

Past 2 weeks have been Breakfast: Spinach eggs, fruit, yogurt or Blended up hemp, flax, chia seeds. Sprinkle that on oatmeal with peanut butter Lunch is usually cheese or hummus on homemade bread with a beet carrot apple sauce (really easy to make and freeze a ton) Lentil cocoa muffin for dessert Dinner is what we are having except he’s on strike with meat: Chickpea pasta and red sauce with peas Flatbread with pesto and mix of roasted veggies He always loves chili but the poops are crazy after Last night all he would eat was that applesauce mixed with peas, idk what was up with that 🙃 A processed snack I do utilize sometimes are veggie straws. Empty calories but it takes him a long time to eat only a few so it gives me time to make him a real meal or snack

Scrambled eggs, Progresso wedding soup, fresh fruit cut up, frozen veggies cut up with butter, rice,

Yummytoddlerfood .com has some great recipes! The hidden veggie mac n cheese from there has been a hit with my son. We freeze it in individual portions in a silicone muffin tray to send in his lunch at daycare.
