If I decrease milk intake (baby is off formula for awhile now) He will eat more solids. Right now we’re doing 3 6oz bottles a day. The rest is solids. We’re still feeding him mostly because he throws food on the floor. Our pediatrician said to lower milk intake at his 12 month appointment
My twins hated "baby food" bit loved small pieces of real food and now put down a lot food, they didn't like me chopping things too fine. The tearing of meat is part of the attraction to eating.
Like cooked broccoli but give them the whole floret. Same with shrimp and chicken tenders. The diced pieces they would throw in the floor but whole food, especially if I ate with them would make them interested

Also maybe try doing some research on Baby lead weaning to see if anything may help with your feeds
Mine is extremely picky as well, just work with what they like and expand off of it. Ex my little liked elbow noodles with spaghetti sauce. I slowly added stuff and changed it so now we can do my dairy free hamburger helper (baby has dairy allergy). I worked off that to be okay with cut up lasagna noodles, next goal is to be okay with cut up spaghetti noodles. I also blend or finely dice veg and add it in, slowly leaving the pieces bigger and bigger
