Dinners

Hey i feel like my kids are eating the same 4 or 5 meals on repeat they're a healthy weight but they have allergies and are picky eaters the only way i get them to eat veggies atm is blending them into sauces, veggie fingers or veggie crisps they will not eat just normal veg as is or with sauces. I'm on my own and they're quite young, plus my youngest screams like he's being murdered when i leave the room so doing home cooked meals like shepherds pie is difficult. Has anyone got any suggestions for quick 1 pot meals or just dinners that are balanced but don't take an awful lot of prep. Current meals are usually something like chicken and veggie fingers or sausage and veggie fingers, sometimes pasta with a veggie sauce that I've made in a big batch and frozen for later, problem is i don't have an awful lot of freezer space and things like soups or saucy dinners usually end up everywhere except their faces. Allergies are milk, egg, ketchup and kiwi waiting for further allergy testing

A spaghetti knock off (tomato cauliflower sweet peppers garlic for sauce? Mac and cheese blend up broccoli put in cheese if they ask about color say the grinch came by and touched it (or just say you dyed it some families don’t use dyes

Stuffed peppers/ stuffed shells/ stuffed potatoes minus the dairy and you can make these with beef chicken and pork idm can add your own little twist and add veggies sauce on top or cook it in the meat

You can do a twist on flatbread pizza no pizza sauce vegan cheese and add whatever toppings or veggies

Fajitas corn torts instead of flour

Tacos are a great quick and easy dinner, I do chili alot in the winter. I don't add meat and instead chop up sweet potatoes in it. You can do cauliflower for pizza crusts and for mashed potatoes. I make a lot of muffins and put veggies in them. Yummy Toddler Food is a great resource for ideas. My 2 year old loves all her recipes and she has allergy substitutes for almost all of them. We are a no milk and egg family.
