My daughter eats a good breakfast and lunch and usually snacks in the evening. Hardly ever eats an actual dinner and she’s almost two. She’s just not really that hungry in the evening if she eats well during the day. I think those are great meals with variety but you could always try halving them and see how he does. So instead of omelette and toast, maybe just one or the other because those are both filling items (imo).
Those look like great meals and I do similar with my son except he's 12 months old so we're doing snacks now too x
Honestly everything you listed is like what I give to my son but in rotations. I also do things w peanut butter to avoid allergic reactions. Anything he gets he eats with fruit or a basic veggie like broccoli or carrots.. grapes oranges pears etc When they're this young we have to get over the fact they're gonna be eating basic meals since they're palate isn't that large. Especially with most under 1 not being able to eat certain things like honey and Crunchy foods. Things like that. But you're doing amazing just with the fact he's eating
