I've seen a chart, like a board game where a kid gets a sticker to put on each square til the board is full and they get a prize.1 sticker for each new food tried. Ive also heard of a 'no thank you bite'. This would be more of a home thing. They need to have at least one bite of everything on their plate. If they don't like the bite, they can say no thank you to the rest.
It may be a sensory thing my son is 4 and on the spectrum we introduce new foods by telling him he can have one bite of food he likes with every bite of new food it seems to work
