I've seen this Mac and cheese recipe for buttersquash. Steam it them blend it will cheese. Mixed with pasta. Could put herbs etc of you want.
Bake the squash in the oven for 40 mins or so, chop up some courgette and pepper and fry add in some ground cumin. Add rice and stock and cook until soft. Then scoop out the flesh of squash and add it in to the mix. We then put the rice back in the squash shell and add some cheese and bake until the cheese is golden but could just pop in a little dish with cheese and bake. Could add chicken too if you wanted I have done it with chicken but preferred it without
Butternut squash risotto is delicious - I roast it in cubes until soft, with oil, sage and pepper. Make the risotto base with onion, garlic, olive oil, butter and rice. Add chicken or veg stock as per your preference. Stir through the roasted cubes or blend them first. Can add tomatoes, other veg, soft cheese, chicken, bacon etc, make it your own :) great with Parmesan and pine nuts.
Mashed butternut squash is delicious! Butternut squash soup is amazing too!
Butternut squash is so versatile. You can make soup out of it by roasting it with various veg, onions and garlic, blend it up and heat it on the stove. So yum. You can also cook it, blend it up and with a bit of cream/greek yogurt you can make sauce out of it for Mac and cheese or noodles in general. Sometimes me and my LO will have it cut up and oven baked like chips.

I just boil mine with a clove of garlic and then blend with a little nutritional yeast (can use cheese) and then put it with pasta as a pasta sauce. My lb loves it! Or just roasted butternut squash done in the air fryer with some paprika and garlic x
