Breakfast for lunch (chicken sausage, eggs, fruit), pita and cottage cheese or hummus, chicken and spinach flatbread, mac n cheese, rotisserie chicken, rice and a veggie, buttered noodles and peas, mini quesadillas with chicken and black beans (my daughter also loves guac), spaghetti, meatballs and broccoli. I will throw a fruit and yogurt randomly in there as well!
Oh gosh I like to think of a complete and whole plate so some steamed veggies and/or fruit/berries with a protein, maybe some cut up chicken or lunch meat and some grains. Could be cereal, tortilla, or whole wheat toast. My son can’t do dairy so I have to get creative with that/
My LO loves fish sticks so we do that a couple times a week! Sometimes we’ll do rotisserie chicken with zucchini and peas (I always keep a small cut up rotisserie chicken in the house for him). My LO will eat pretty much anything right now so I try to give lots of veggies and fruit while he’ll still eat it! You can make veggie chicken nuggets if your LO is picky at all and they are fun! Another big hit with him is Lima beans, tomato and cucumber cut up with red pepper hummus and pita bread!
