Lunch/dinner ideas

I have a toddler who is always a guessing game on food. A husband who doesn’t like vegetables or seafood. Looking new ideas. Veggies can be on the side. Doesn’t have to be cheap cheap but not 40$ dinners unless it’s going to be a lot for leftovers. Pinterest is just showing noodles and chicken. Need help!!
