Drop your recipes for meal prep breakfasts

I have a 1 year old. Looking for easy make-ahead breakfasts that I can warm in the mornings. She wakes up HUNGRY and it's hard for me to whip up something most days aside from a single egg which I think she's sick of. I've been looking into bite size muffins or pancakes. What have you made ahead that works?

I make crepes with loads of different fillings like cheese, nut butter or a tiny but of jam. I just warm up and serve with a little piece of fruit. ABC Muffins are great as well Eggy bread is also a one we love I know you said she's sick of egg but we love making rice with egg and put a little soy sauce and sesame oil on top 🥰

@Monika what's eggy bread? Whats your crepe recipe?

Sorry, eggy bread must be the British name 😅 it's just eggs whisked with milk and then you dip slices of bread and shallow fry. It's not sweet like French Toast, we usually just serve it with a side of yogurt in my home country. For crepes I just eyeball but I measured once for my friend and this works good: 2 eggs, 1 cup of whole milk, 1 cup of flour, 1 pinch of salt and half a teaspoon of baking powder 😄 might need a bit more or less milk depending on the size of the eggs and the type of flour but it'll be around a cup. I pour thin on the pan and cook. Then I pop them on a plate and cover with another plate. This makes them very soft. I store them in the fridge in a plate with cling film. 😊

Sometimes I make chia pudding the night before, or overnight oats. I was thinking of trying porridge fingers I saw on Instagram. Breakfast muffins Tray bake pancakes.

Egg muffins are my go to for breakfast prep. Sausage balls and overnight oats are also yummy. Yogurt and berries are fast. Toast with jam is something easy my kid enjoys.
