Egg ladder recipes

Hello mummas of bubs with egg allergy! I am clueless when it comes to baking but I wanted to bake a muffin with low sugar content or a savory muffin with low salt content but the recipe the hospital has given has so much sugar and savoury muffins have a fair amount of cheese. It could also be a cookies recipe with not much sugar. Just wondering if anyone have come across a better recipe, my little one is 8 month old. Appreciate any suggestions.

For a food challenge, we followed the instructions exactly. You could probably use honey instead if you wanted. It seems like a lot but my son only got to eat a tiny bit before reacting to the egg anyway so he had hardly any sugar. Plus it's spread out over 20 minute intervals. Just take some tooth wipes to clean their teeth of the sugar (or vomit) if needed.

They recommend no honey for little ones under 12 months! Sorry I don’t have anything else constructive to add lol I’ve just been baking scrambled eggs at 180°c for 15m to get my little one exposed to egg because her skin prick came back test okay for the baked stuff. Will follow for a muffin recipe!

Oh yeah oops totally forgot about the no honey under 12 months thing! Good catch. Maybe golden syrup then? The main thing is they eat it. My son is almost 3 and refusing to eat the food during food challenges since he knows he might get sick so I guess sugar is low on my list of concerns at this point in time. 😔

Found something: banana muffins. The banana provides the sweetness 😊 https://scientificallysweet.com/sugar-free-banana-muffins/ Just be sure your LO is not allergic to any of the individual ingredients. I think the percent of egg is important though so I would definitely check with the hospital if this is ok to swap recipes.

@Liz thank you so much. Unfortunately my LO has FPIES to bananas (a type of allergic intolerance). I think you raised a good point, he is also allergic to peanuts, sugar should be the least of my concerns as long as he eats it and the recipe has the right percentage of eggs.

Best of luck. I hope your LO passes the food challenge. It is not an easy journey. My son is also allergic to peanuts. Just a tip also take clothes for you. My son failed egg spectacularly and I had clothes for him and forgot about me. My husband had to run out and buy new clothes as mine were no good anymore. Good news is 2 years later we tried a baked egg biscuit and he can tolerate it, there's a good probability your LO will outgrow the egg. Peanut is a different story. We're still on that long journey. But one step at a time!

The extra clothes are because egg allergies tend to have a vomiting reaction.
