I make my daughter mini pancakes with fruit. It’s such a soft food, so I wasn’t worried about a choking hazard. Prior to the pancakes she was just having purées. For the toast, with my first daughter I did blw. So she did really well with solid foods. I recommend giving baby strips of toast. It’s enough that baby can hold on to it, most likely he’ll start off sucking on the strips.
I started with Cheerios and puffs and stuff that melts easier, that helped him learn to chew. Now I cut up pancakes and toast for him
We use the app solid starts my pediatrician recommended it to us and if I feel like I need to cut it up differently then I do so. Here recently I’ve just been cutting up her food in small bite sized pieces but she’s been doing baby led weaning for a while and has a lot of teeth to chew her food with.
I just started to give it to her, toast with a thin layer of peanut butter on it and scrambled eggs cut into strips 2 adult fingers width and she does really well. Also smashed blueberries, flat like a disk.

I give my son all sorts of things. He loves peanut butter toast with just a thin layer of peanut butter on it. Smaller foods are harder for them to pick up so we start with strips of food that he can grab and take bites of
my baby eats purées like 90% of the time and he has “snack” after his first nap where he tries solids, i give him the whole thing and he just gags and figures out how to spit it out when he shoves the whole thing in his mouth,, it’s like what we do when we get food caught in our throat at some point we have to figure out that skill and if your okay to hear your baby struggle for a second then give him the whole thing if you want to you can make them smaller like the size of a puff or yogurt drop but maybe try like softer solids like fully eggs or moist pancakes using banana and an egg with some flour,, if he has teeth he should try to use them with like teething crackers or husks
