My little girl’s favourite ones are red lentil pancakes : boil red lentils with carrots,onion and garlic, then puree it and add some flour and cook in a buttered pan. Banana oat pancakes: blend banana, oats, milk and then add some flour and baking powder and if you want cinnamon for sweetness 😊 both take about 5-10mins and are super nutritious and easy to make
I made 6 eggs, half a courgette, two tablespoons oats. Pop in the oven 190 for around 20 minutes and then cut into fingers last for two days in the fridge. Omelettes?
Also I'm sure you're doing a great job. It's hard running between two of them and you've got yourself to look after too. A few mouthfuls might be all he's wanting at the moment xx

No I that's it though. Next time I'm going to try making with peas instead as I suppose you could put in any veg

Any kind of pancake is so good, I make a batch of about 10 and freeze them it’s a life saver because they’re easy to hold and taste really good
