MORROCAN LENTIL SOUP
Moroccan Lentil Soup
Ingredients:
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tbsp tomato paste
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp cinnamon
- 1 cup dried lentils
- 6 cups vegetable broth
- 1 (14 oz) can diced tomatoes
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions:
1. In a pot, sauté onion and garlic in oil for 2 mins.
2. Add tomato paste and spices; cook 1 min.
3. Add lentils, broth, tomatoes. Season with salt & pepper.
4. Bring to boil then simmer for 25-30 mins until lentils are tender.
5. Garnish with parsley.

Yummy. Do you have to soak the lentils for this? Or let it simmer till soft?
