I bake whole grain crackers, soft bars, graham crackers, fruit and oat squares, and make dehydrated veg chips once a week while I meal prep. He loves fruit, veg, cheese, yogurt pouches, smoothie pouches. Anything by Once Upon a farm is loved by my boy. Sometimes I’ll make a batch of avocado chocolate pudding and it will be snack 2-3 days in a row with some strawberries. Smoothies bags are good to make ahead for a quick snack and include veg without them fussing.
I was also having a hard time with this! I started baking my son (12M) muffins using bananas, strawberries, blueberries, chia seeds, oatmeal, or anything I have on hand and he’s been loving them. I think he enjoys that he’s able to feed himself too and not too messy. I usually make a dozen mini muffins and store them in a ziplock bag for the week.
My son likes the Gerber grain and grow bars, all fruit (bananas are especially good for on the go), peas, cheerios, crackers & wafers

Our go to: bananas, fruit grain bars, canned pears or peaches, goldfish, and apple slices.
Sliced fruit is my go to, Dino bars, yogis, cucumbers
