What are your favorite meatless meals for Lent?

My husband is pretty picky and doesn’t eat much seafood. I just wanted to see what other people were eating? We are having eggplant parm tonight. But, I would love other ideas! 😊

We tend to do omelette, soup or lentil dal! The kids have fish for lunch at school so it doesn't hurt us adults to have a simple meal.

Soups are my go to! I’m making lentil soup and rice tonight and I also make a mean chick pea soup!

I don’t eat much seafood myself, but I do like the Gortons Fish Fillets with a side of mashed potatoes and veggies. Or use the fish fillets for fish tacos. Chilli (I make meatless chilli anyway) with a baked potato. Pasta and garlic bread Mac and cheese Ramen with eggs Tomato soup with grilled cheese Usually go to the basics, try not to overthink. ❤️

I always make a meatless Chili with mushrooms. If you cut them up super small, you can’t tell the difference. They take on the flavor of the chili. My dad hates mushrooms and couldn’t tell until I mentioned it until after he ate a full bowl.

Even people who don't like seafood (like me) can get into fish tacos. Just panko & pan fry strips of tilapia, then make tacos with queso/goat cheese, avocado, tomatoes, cilantro, lime juice, etc. I'm also a big fan of making hummus into dinner. Pair it with pita, dates, nice cheese, fresh fruit, and falafel if you want something hot. My preschoolers LOVE homemade hummus and they can even help make it! It's worlds better than store bought, weird ingredient "white people" hummus in a plastic tub.

I make my hubby all kinds of cakes! Potato cakes, zucchini cakes, salmon cakes and he loves it! Also when we ate gluten he would do pastas!
