How do you meal prep for the week?

I'm super pressed for time right now so what I do is 3 things to help with food prep. 1. Everyday I try to prep at least one or two of our fresh things because we only buy them once or twice a week. Ex: cut up carrots for snacks or make a quick fruit salad for the next few days. 2. Every month I make a smoothie mix for popsicles and I make 2 kinds of muffins for my daughter and breakfast muffins for us. My LO is allergic to eggs so she has to have separate muffins than my hubs. I do them as little muffins for her, freeze and they last all month. 3. 2 nights out of the week I double my recipe so I don't have to cook dinner every night.
