Trying to be a little bit healthier for lunches! Any other quick easy ideas?

Pitta, red pepper hummus, bulgur wheat salad with lemon juice/ olive oil/ cucumber/ tomato/ red onion/ parsley/ salt & pepper. Since going non dairy for my breastfed baby with CMPA I’ve found it really difficult to eat healthy. I’ve been living off bread spaghetti and processed meat. Two under two so looking for any other easy and quick lunch ideas!

Honestly we have really simplified our diet. A lot of our meals are simple a protein and a vegetable and it has made my life so much easier! I recently made mini meatballs that were half ground beef and half ground pork and everyone loved those! Also, that salad looks delicious. I make something similar with quinoa- how does the taste of bulgar wheat compare to that?

@Alyssa thank you! We do that for dinner I should start for lunch as well ❤️ I like it soooo much more than quinoa or couscous, nicer consistency

I mean we definitely do fancy recipes sometimes but my kids basically only eat meat and fruit so it’s not really fitting for them! Great to know- if I am remembering correctly I think bulgar wheat is more nutrient dense as well, I’ll have to get some! Thank!
