Can you get things to make popsicles? We have some silicone squeeze ones, as well as the kind that are rigid with a plastic stick, and we make them with a bit of juice, or squash, or an electrolyte drink. The popsicle makes it feel like a treat, but it being ice doesn't stop it from being hydrating. Could also get the frubes/store brand yogurt tubes and freeze them and they feel like an ice cream one to them (my 5 year old and the little both love these)

Jelly. It's our secret weapon when the kids are sick. So far no matter how sick they will not refuse jelly
You can give dioralyte in water if absolutely needed but talk to a dr first. Our boy had a bug and was a bit dehydrated afterwards so the dr recommended we use dioralyte. Pharmacist may also be able to advise. Our boy also wouldn’t drink water but he loved the dioralyte
