Keep offering. And avoid the temptation to give her "preferable" foods if she doesn't eat them, or become a short-order cook. You choose what she eats. She chooses IF she eats. If she doesn't, end the meal and try again later. As far as nutrition goes tbh toddlers can exist on shockingly little, so don't worry too much about nutrients. As long as you are offering healthy foods, she'll get what she needs and is unlikely to go hungry. Try things like homemade veggie fritters or cooked carrot sticks that she can munch on as a snack, if that seems to work better.
Blend them into a pasta sauce?
@Melissa thank you for this advice! I always feel so guilty if I don't do her something else. She eats lots of fruit and homemade meals and I also give her vitamin drops so I know she's getting what she needs. I will have to just stick at it xx
Mix them with fruit? Apples and cabbage go well together, kiwis and spinach, avocado and pineapple, etc.
Veg rice Boil mix veg then in a pan put butter then white lasagne sauce cook it and put veg
Just keep offering vegetables consistently and in various ways. Offer but don't make a big fuss if she refuses to eat them. More importantly - does she see you & others around her enjoying vegetables?

Spinach pancakes!! Work wonders with my toddler. I used to do broccoli cheddar rolls too. Find ways to hide veggies is my advice lol
