Did you blend it and cook it like a pancake?
I literally just grate the veggies and squish squish to make the water of the veggie come off so the galettes don't have a soggy texture. Then I add the spinach I have cut and the grated cheese, then the flours then the egg and spice and I mox all that with my hand usually until I like the texture. It needs to not have too much flour but enough to make it all stay into a nice galette. Then I cook them with olive oil once the oil is warm enough! No specific measurements, I just cook with instinct by looking at the texture and of course depending on the number of galettes I want to cook! It's nice with a veggie soup on the side so they have two different textures to eat! :) Hopefully it helps 🥹
