Any of you attempted to make chicken nuggets?

My nieces were over and they’re big fans of oven dinners, so when their mum made them some chicken nuggets my LO snatched a few lol. I’d love to give her these oven dinners but the salt content just KILLS me. Their tiny bodies aren’t ready for it yet (she’s 15 months old). Wise to attempt to make my own? If so, do you have a trusted recipe?

Ingredients: • 1 lb ground or minced chicken • 1 cup plain panko or homemade breadcrumbs (unsalted) • ½ cup unsalted oat milk (or any unsalted milk alternative) • 1 egg (or egg substitute if needed) • ½ cup all-purpose flour (or whole wheat flour) • ½ tsp garlic powder (optional) • ½ tsp onion powder (optional) • ½ tsp paprika (optional, for color) • 1 tbsp olive oil (for baking) or avocado oil (for frying) Instructions: 1. Preheat Oven/Air Fryer: • Oven: Preheat to 400°F (200°C) and line a baking sheet with parchment paper. • Air Fryer: Preheat to 375°F (190°C) if needed. 20 minutes I also like to add dried vegetables into the mix or minced vegetables too! Also a dash of Italian seasoning! Hope your lo likes it!

I just cut up chicken breasts, cover it with flour then egg and then dip in breadcrumbs, my little boy loves them

I've used chicken and turkey mince. Grate a couple of carrots, a courgette (zucchini, not sure if you're UK/USA) and finely dice a red onion. Squeeze the water out from the veg and mix by hand with herbs of choice. Use an egg to help bind and then shape into small nuggets or burgers! I've got a zip lock bag full of these in the freezer! You could breadcrumb/panko cover them too. Super easy and really tasty. I cook them in a few squirts of low calorie cooking oil x

Yes Because I already make chicken schnitzel from scratch. So I thought if I just make these smaller, they’d be “nuggets” lol. I don’t use mince as above though I cut chicken into smaller pieces
