Fussy eater

My 15 month old won't eat any hot meals, other than beans or cheese on toast. He was poorly with tonsillitis and didn't eat for well Iver a week only milk yogurt and jelly. He now refuses all hot meals, he's fine for breakfast which is usually wheatabix and fruit, lunch he's OK with depending what it is. But he refuses all meat, pasta, nothing tomatoe based, rice literally anything I cook He refuses. It's so frustrating so I end up making him toast so he'll eat something. I'm at my wits end with him. Any help appreciated. He won't even eat our fail safe mac and cheese ready meal.

It's pretty normal at that age, they start to understand they're their own person and can make their own choices. It's also common for toddlers to be less interested in food since they don't grow as much/fast as they used to so don't need as many calories as they used to. They might also be developing some taste/texture sensitivity which is normal, just keep offering. It's important to trust they know what their body needs. To not force food on them. Offer food regularly, offer food you know they'll eat (like toast) with other food you want them to eat. They might not eat it (so don't do big serves) but it's important to keep offering choices.
