My son is a sucker for veg “pancakes” 😂 I make the usual pancake batter but then add in blended carrot, spinach and cauliflower and tell him it’s hulk pancakes 😂. He’s none the wiser and loves them with a tiny bit of sauce lol. He also enjoys eggy bread, sushi (weirdly!), nasi goreng (which you can make relatively plain), soups and he also enjoys pesto pasta but lately I’ve struggled getting pesto that he can have so instead have been blending broccoli with a bit of oat milk and then pouring that into his pasta to coat it and he’s loved it 😂 xx
Daal or veggie/meat chilli always goes down well. I add blitzed carrot or sweet potato to both for extra veg. Also green chicken orzo - blended spinach with stock and cook the orzo in it a bit like a risotto but less time consuming. With chicken, cream cheese and roasted cherry tomatoes. Fajita traybake - chicken thighs on a bed of onion/pepper/tomato/chickpeas, serve with tortillas and guac and corn, really packs the veg in!
Youngest will not eat anything home made now in that fussy phase. I'm not to worried as my oldest did the same and he eats everything now. I found what I eat he wants so I make a little extra let him just take from my plate. I'm on a calorie deficit so I can't always have the same as the kids so I'm just happy he eats. But if we go out he will eat anything x
One that I love as a quick healthy meal, is blending a block of frozen spinach with an egg and then scrambling it in some butter. Mine loves it
@Courtney my boy loves a pancake too and usually make spinach ones but never tried other veggies!! Good idea. And my son has found a love for rice so I could make him some sushi, great idea. Our boy used to love pesto pasta but idk anymore!! Will have to bring that meal back out
@Helen oh bless you. I try and rotate between some meals at his nursery that they tell me he loves. Their menu is pretty good, especially the summer menu. I suppose they’re more like fritters than pancakes but the word ‘pancake’ seems to excite him more lol. Cheese and courgette muffins (I use dairy free cheese as he’s allergic) are also a huge win! He thinks he’s just getting cake for lunch 😂😂. He’s a very fussy veg eater so I’m constantly having to blend & puree it into his food 😅😂 xx
Today we did pasta with green pesto, creme freche and some roasted veggies chopped small and stirred in and he ate the lot and asked for seconds. Other favourites are omelette with some cheese and veg in, homemade cottage pie, curry and rice, and chicken with chips and corn on the cob. Love the idea of trying fajita tray bake @Charlotte . We used to make this loads but I had forgotten all about it!
@Charlotte ooo we love a daal but our boy just won’t try it. These sound like lovely meal ideas though!
@Akansha gnocchi is a great idea. I wonder if he’ll go for it as he likes rice balls - seems to like the novelty of it being ball shaped so might like gnocchi
@Lena yeah my boy is the same. He wants to own whatever is on my plate but won’t actually eat 😂
@Angelica good idea!! I’ll have to give this a go. He’s never liked scramble but likes cheesy omelette so adding the spinach is a great idea
@Courtney yep everything seems to be muffin/cake/pancake form for us too 😂 thankfully they grow out of it eventually. He did eat chicken off the bone (2 legs!!) the other day so that was a win
@Nat never thoughts of adding veggies and crème to pesto but that sounds lovely. We love the green pesto in this house and have it with garlic bread and probably a cob of corn. Corn is always a win here!! Some great ideas here thank you ☺️
My lo is the same. She ended up with Cereal for dinner a couple times, where she didn't want what I made her. Gets the boxes out herself. She will happily eat plain spaghetti. She's gone off mince but will disect home made lasagne. Dry bread was a first yesterday, she devoured that. Made sausage casserole in the slow cooker the texture of the sausage was like mush so went down better. Think It's just an awkward fase currently.
