Suggestions for cold lunches??

My son is 19 months and goes to an in home, private daycare. I pack his lunch each day and it needs to be something cold (or okay not being warmed up). I’m struggling with ideas. Right now he basically has some sort of meatball or sausage (totally cooked) that he can eat cold! I’ll mix with some fruit, cheese, and typical snacks, I’ve done pasta salad (pasta mixed with shredded chicken, tomatoes, etc). He’s not really into sandwiches yet, and we’ve done just rolled /chopped lunch meat, but that’s not a huge hit either…

Would he eat pitta bread or breadsticks with hummous or another dip?

Would omelette strips work? I make them night before, my LO ate them at home next day cold. I chuck skinless boneless low salt tinned sardines flaked in, or chopped cooked different meats (for protein) and any veggies, like chopped spinach, mushrooms, chopped steamed veg (any of these veggies can also be from freezer packs and easily microwaved quickly and chopped in if easier), grated carrot, things like that.. and sprinkle of cheese. Ends up being a mix mash kind of frittata / omlette thing which I cook, let cool. make into strips for next day from fridge to eat cold. Sometimes chuck a handful of grains in these too to bulk them up, like those healthy low salt ready seasoned grain lentil type microwave packets (I noticed your US based but we have these in supermarkets here in UK. I just made this eve for tomorrow which my LO will eat cold as finger food. brocolli potato cheese tots pre baked in oven. Don’t need reheating next day

I always have batch of meat based waffles in fridge which I make every few days. They have same feel and consistency to normal waffles but they’re nutrient rich as they’re made up of ground meat (I use lamb, beef, pork, chicken/turkey mince ones, changing the type of meat each time I make a batch, for variation). Sounds gross but my LO loves them! All it takes is cooked ground / minced meat, an egg, banana blended up and depending if needs thickening up, I add some spelt flour. Pop in waffle machine and then cut them into triangles. Again my LO eats them cold. Just made this eve recipe saw on insta of mashed mango, banana, wheetabix made into balls rolled in coconut. Hoping they come out good 😬🤞🏻 And made batch some lemon chia oat flapjacks, & banana apple sauce oat blueberry oat bake which I’ll slice these into bars to eat cold. Or blended spinach and egg cooked and rolled with cream cheese into cold roll type wrap things But this IG page has good ideas

Little pinwheels? My little boy loves cheese and broccoli but you can put anything in them really

@Emma I wish we had weetabix in the US. The closest thing we have is frosted mini wheats which has processed icing on it. They are good but it’s not weetabix where it’s just grain and vitamins lol.

My daughter needs packed lunch for her setting. She doesn’t eat sandwhiches or any bread like items. They are only able to heat things that are shop bought and come with instructions but I bought a thermos packed lunch box so I heat it in the morning. I make something the night before like different kinds of pastas/stir fry/curry and rice/pizza/scrambled egg with ham + cucumber is a good one too. Corn on the cob/sweetcorn always goes down well
