You can use chia seeds instead of egg in recipes. I haven’t tried it yet but I’ve seen a lot of recipe books mention it
For omelette I use chickpea flour And then tofu scramble

I give my baby oats & chia seeds a lot of times for breakfast. Sometimes w added peanut butter or fruits
Oatmeal with peanut butter is a win in our house. My girl doesn't always like eggs and I couldn't tolerate them pregnant so I don't eat them nearly as often anymore. Toast is also a good option. Fruit and sausages. Pancakes (we go with low sugar mixes).

Idk if u have it in the US but we use an egg replacer called Crack’d. I make omelettes and scrambled ‘eggs’ from it all the time.
I have used Greek yogurt in supplement to eggs in some recipes! Hopfully that helps a little :)
