Breakfast: - Banana Yogurt Pancakes, with berries on the side. -Scrambled Eggs & Black Beans, with Avocado on a Wrap. Will use any leftover meat at times, or reduced fat cheese instead. Lunch: - Tuna Pasta - Prawn Salad; Salad made with Lettuce/Spinach, Tomatoes, Sweetcorn, Beetroot, Olives sometimes. Seasoned with Olive Oil & Lemon. - Bread Thin, Smoked Salmon & Cream cheese with side of cucumbers and tomatoes. - Veg Fritters, made with any veggies and anything leftover I might have. Either air fry them or touch of olive oil and cook them in the frying pan. For snacks: - Pretzels. - Some crackers with butter. - On a fussy day I give her toast with peanut butter and banana as she loves, or “homemade” jam (just frozen fruit cooked and cooled mashed with some honey) - If she asks for fruit, I tend to let her have any fruit up until 1h before dinner. - Occasionally she will eat some low sugar rich tea biscuits or some crisps if I’m eating it myself and she asks 😂
Dinner is anything we might be having. Curries, pasta, seat and chips, mash; pizza, anything really. I offer and if she doesn’t eat, then she doesn’t. But I won’t give anything else.
