For muffins, I did banana muffins and just add an extra banana instead of an egg and the same for pancakes, add a banana instead of egg - not sure why but they work the same. My son wouldn’t eat the muffins from the imap recipe so I made different ones and he loves them. If he sees the tin he has a tantrum if he can’t have one.
We used Warburtons milk roll for step 2. I stuck the roll in the freezer and grabbed a slice out each day so it wouldn't spoil. In fact the first few days before it was most of a slice I snapped the frozen slice in half and only took half out 😂

You can substituted eggs in any recipe with either a banana, some apple sauce or egg replacement (whole food and Amazon have it). They each have their own set of portions in regards to eggs so you can look it up to see how much one egg equals. Overall they are good replacements. (My niece also has an severe egg allergy and I’m a pastry chef so these are things I use for her)
