A few ideas, I find it really helps having a stock in the freezer or etc bits in the fridge. Whenever I cook I try to make at least double to stop me reaching for the processed stuff which I to easily do often Lunch- pinwheels, pitta pizzas, pasta, veg tots, toast with hummus, cream cheese, avocado ect Dinners-mac and cheese, paneer curry, stir fry with tofu, lentil Shepherds pie, cauliflower cheese, jacket potato, risotto, fajitas, daal

@Flo this is so helpful for us. Thank you ❤️

Our baby is often fed lunch at home (at childminders or ours) so it’s a bit easier to have messier options. Our go to is sweet potato mash, tomato bean chilli (without the heat!), any pasta dish, he loves scrambled tofu, sometimes just chopped tomatoes/avocado or nut butters/hummus on toast are great lunch snacks. He also loves picking up peas, sweet corn & chickpeas to feed himself, which can distract him for ages so that’s a good one to give me time to get other things ready! We also tend to just roast a load of vegetables and then either just give them as they are, or cut up finely to spoon feed with rice, add some tomato sauce to make a pasta sauce. But a load of roasted veg seems to be the base for everything for us! X

@Ellie thank you so much. Can you freeze batch cooked roasted veg??

I’ve never tried but I’m sure you can! We often freeze chopped up veg and tomato sauce so I guess that’s mostly the same! Maybe just whole vegetables roasted wouldn’t defrost the same texture but if you’re mashing or cutting them finely anyway I’m sure they’d be fine ❤️

@Ellie thank you. I’ve made a tagine today in the slow cooker. Will test on the baby tomorrow 🥄

Ah nice, that sounds delicious! I forgot to say, we also make a lot of dals, especially quick ones with red lentils, I bet a slow cooker is great for dals! I’ve wanted one for ages! I know there’s a ton of recipe sites but Gousto have good veggie/vegan recipes and you can filter by time, lots of them are quick and easy :) 🥘 https://www.gousto.co.uk/cookbook/vegetarian-recipes

@Ellie thank you so much! I’ll take a look at this 😘
