When doing it as 1 big cake cook for 30 mins or until golden and tester comes out of the cake clean. It's so easy and tastes great. It's an easy recipe to mix with a fork too if you don't have cake beaters. I'm going to try swap the cow milk for coconut milk and see how that works

@Hayley oh wait till you taste it!! Honestly it's the best sponge recipe I've found and I've made LOADS!! I first made it for my partner's birthday. With the white chocolate it's REALLY sweet, almost heart attack level sweet. I have managed to adjust the recipe into a chocolate cake recipe too

I just go by the ratio 4 egg, 8ozs of butter, sugar, flour and a dash o f vanilla He's a fruit monster just hasn't had added sugar stuff yet really apart from some ice cream haha

Normal cake is fine by me. I normally do a big chocolate cake for everyone and then a small Victoria sponge for the baby to wreak. I think I’m going to switch from the classic sponge to a chiffon cake this time for the baby cake because I did one for a SIL and it was so nice and waaaaay less sugar… I think my third might actually eat the whole cake so probably better to cut down a bit.

Swiss meringue buttercream I think had less sugar (and is smoother) than the much simpler American buttercream but I found you need a really good mixer to do it

For my daughters 1st birthday I'm going to probably get a pretty basic cake and just put some decorations on top to make it look fancy. It's going to be her time trying sugar! She's going to love it even if she doesn't remember it😂
