Toddler won’t eat chicken/anything with meat texture

I’m really struggling getting my child to eat chicken/meat. I think it’s a texture thing because he just spits the food out whenever he gets a piece of chicken/fish or anything with that kind of texture. He’s ok with chicken sausages or meatballs but won’t eat pieces of chicken or minced meat. I don’t really know how else to get him to eat meat because at the moment he only seems to enjoy dry things for example, very lightly coated pasta/noodles. Potato waffles/toast but won’t really eat mashed stuff like he used to. I don’t even know how to get veggies in him anymore? I have no idea what to feed him half the time 😩😩

How old is he ? My little one was like this and blending the meat into like a pasta sauce or whatever sauce you’re having can help! Same with veggies too I’d just blanch some spinach and frozen veggies with chicken and mix it with pasta or rice Eventually start blending it less and less fine so he can get used to the texture
