Favourite slow cooker recipes?

Baby #2 is coming and looking for easy meals I can do in the slow cooker to help keep my sanity. *please, I am not a strong cook, give actual quantities/directions if you can!! Thank you so much!!

I'll do chili, stew and Puerto Rican style beans and then throw some rice in the rice cooker. I feel like they're super beginner friendly and hard to mess up. You can sear the meat to make it taste better but also don't have to. I don't eat red meat but when I make these I always get told they're good by my husband and mom who are always brutally honest with me 😅

Cheesy broccoli, chicken pasta - Add the chicken breast (diced 200g), broccoli (1 head), onion (1 small, diced), seasonings (Italian seasoning & Garlic powder, I just wing it), Philadelphia cheese (100g), milk (250ml) & chicken stock cube (just crush it into the pot) - Mix all the above together, cook on high for 3-4h - Add dry pasta (160g), more milk (250ml) and cook for roughly another 30m/until pasta is cooked. - Add as much cheese as you want (I personally go for extra mature and as much as I can 😂), let it all melt and give a taste test, add more cheese if necessary.

For us nothing beats a good pot of black beans! Top with Monterey Jack and sour cream or queso fresco. Simply black beans water half an onion and four to five Garlic cloves + salt.

I use mine to make a pasta sauce. It’s really simple but my son says it’s very tasty. 500g or 1lb lamb mince, one shredded carrot, 2 vegetable oxo cubes, 2 boxes of passata (500g each), 1/2 tsp parsley, 1/2 tsp oregano, pinch of rosemary, tsp of garlic purée, tsp of tomato purée. Add garlic pureee to lamb mince, then brown off in a saucepan. Season with veg oxo cubes. Then add herbs followed by carrots. Stir through to ensure carrots are covered in lamb fat. Cook for couple of minutes. Add both boxes of passata then transfer to slow cooker. Cook on low for 4 hours or high for 2. I usually eat with pasta or even a jacket potato. You don’t have to add the carrot, but it’s a good way to add in veg and brings a nice sweetness to the sauce.

I mix chicken, hot sauce, butter & ranch seasoning & make wraps with lettuce & tomato. So easy! I also just do chicken with Olive Garden salad dressing.
