I found the only carb that didn’t spike me is the microwave butter potatoes they have been excellent alongside protein and veggies for your plate
For me same as Sarah' comment. All those things didn't spike my sugars

Hiya, I was diagnosed 2 weeks ago aswell, I've mainly been snacking on fresh fruit, Greek yoghurt, protein yoghurts, protein bars, carrot and cucumber sticks with humous, mini egg muffins (like mini omelettes) these snacks didn't spike my sugars. I hope that helps 😁
