Manchester reccomendations?

Bit of a different one, my 30th is this year and I want to go to Manchester for the weekend I’ve never been, I’m from down south. I was planning on getting a train & airb&b there. I’m looking for good nights out - brunches, sing along brunches, dinners. Any recommendations please? 🙏🏽
