**Lemongrass Chicken & Rice Noodles
**Ingredients:**
* Chicken thighs (1 lb), cubed
* Rice noodles (8 oz)
* Lemongrass (2 stalks), minced
* Ginger (1 tbsp), grated
* Garlic (2 cloves), minced
* Soy sauce (3 tbsp, kosher)
* Lime juice (2 tbsp)
* Sugar (1 tbsp)
* Vegetable broth (2 cups, kosher)
* Scallions, chopped (garnish)
* Chili flakes (optional)
* Vegetable oil (2 tbsp)
**Recipe:**
1. Marinate chicken: lemongrass, ginger, garlic, soy, lime, sugar (30 min).
2. Cook noodles.
3. Sauté chicken in oil. Add broth, simmer (15 min).
4. Serve chicken over noodles. Garnish with scallions, chili.
