Shepherd's PIE with Lentil TOPPINGS

**Shepherd's Pie with Lentil Topping** A comforting classic, made vegetarian & delicious! **Ingredients:** * 1 tbsp Olive Oil * 1 Onion, chopped * 2 Carrots, diced * 2 Celery Stalks, diced * 1 can (14oz) Lentils, drained * 1 can (14oz) Diced Tomatoes * 1 tsp Dried Thyme * Vegetable Broth * Mashed Potato (topping) **Instructions:** 1. Sauté onion, carrots & celery. 2. Add lentils, tomatoes, thyme & broth. Simmer. 3. Top with mashed potato. Bake until golden. **Macros (approx. per serving):** Carbs: 50g, Protein: 20g, Fat: 10g Note: numbers are estimates. Adjust portions for dietary needs.

That’s one of my family’s favorite meals I make except they enjoy it more when I add biscuit mix to the top instead of mashed potatoes.
