Have you tried adjusting the seat, like checking if she still needs the newborn inserts etc? My baby was like this but got a lot better when I adjusted it and took some out. Also try to plan longer journeys for nap time. I think all babies hate stop start driving unfortunately.
We took the newborn insert out last month and she was fine, it's just been the last week or so. Unfortunately all our baby classes and just where we live is covered in roadworks atm so that doesn't help
Maybe check if you can adjust where the straps come out by putting it a bit higher? With my first baby her head started flopping forward when she was asleep and I hadn't realised I could adjust how high up the straps bit was 🙈 anyway you could check that if you haven't already, might be uncomfortable if they are coming out too low.

I second adjusting the straps, have a look in your car seat manual but mine has a panel at the back that comes off and then you raise the harness. My little one was screaming all of a sudden when putting her in the car seat a few weeks ago and she’s on the higher percentiles for her height so she’d outgrown the current position of the straps, moved them up and she’s absolutely fine again as must’ve been sore on her shoulders x

Guys, I changed the straps and she's still hysterical to the point where we can't go out as I'm worried about her being sick from all the crying😭
Exactly the same for us, will only sleep when on the motorway now 🤦🏼♀️
