Need to use up carrots

Does anyone have a good recipe for using up carrots? Anything nice and easy that does not require too many ingredients. Savoury or sweet recipes :)

You can do cheesy egg muffins with grated carrot and courgette, my baby loves them!

Chicken pot pie with chicken or Turkey, carrots, peas and celery so yummy
