My first almost always did both breasts, but this baby will only nurse on one side when does latch. If your baby has been satisfied with just one breast per feeding, I think you'd be fine.
At night, I only do one. During the day it varies but mostly one too.
I mostly just did one per feed with both of my kids, occasionally both sides if they were particularly hungry or still fussy after a feed, but not often
Always offer the second, if they don’t take it, that’s fine. I used to just offer one and he actually dropped a few percentiles. Offered both and he went back to his starting point (this won’t apply to everyone, some babies are the ‘one boon and done’ type).
