Thanks for all the advice and tips!
I did a similar trip last summer! Had an amazing time. Big tip - Spend some time in Beaune, beautiful town in Burgundy that’s all about wine. Another tip would be to pre-plan and book your tastings, most wineries you can’t just drive up and request a tasting. I used Airbnb ‘experiences’ and also the website ‘viator’ to book tours and tastings, it was great.
We stayed at Deveny Mars in Burgundy and loved it. The wine there was amazing as well and we sent home many bottles from Deveny mars and other wineries in the area. Corton C and Moillard both had wonderful selections as well.
My advice is a very general thing that I was told and it ended up being accurate. Someone told me to not spend a fortune at the fancy French restaurants and try the smaller, local spots. If you ask servers, bellhops, and people you meet in town over concierges and online reviews, I think you will get a better, more authentic, and affordable experience of what the locals enjoy.
