Just a little disclaimer, Iā€™m just a hobby baker who likes to experiment with different ideas, recipes and flavours! So donā€™t hate me if itā€™s grossšŸ„“šŸ˜‚ Ingredients for the Cookie Dough: 200g baking spread/stork 100g granulated sugar 225g light brown sugar 1 egg 1 egg yolk Splash of vanilla 435g flour 2 tbsp cornflour 1.5tsp bicarbonate of soda Pinch of salt 400g chocolate chips! (I used milk, dark and white) For the Filling: 1 jar of chocolate spread (for this particular recipe I used Jive from Aldi) 1 multipack of Jive chocolate bars 1 bag of giant chocolate buttons (optional) This can be adapted to make various different flavours!

Now to make the cookie pie! Add your butter and both sugars to a bowl and mix until it gets like a creamy kind of texture! Add egg, egg yolk and vanilla and mix that together. Then add in all your dry ingredients. Flour, cornstarch, bicarbonate of soda and salt. Mix until you form your cookie dough! Pour in all of the chocolate chips and mix again I then like to split the cookie dough into 2 sections. So I split it into one slightly bigger section and one smaller section. Press the bigger section of dough firmly into the base of a cake tin, making sure to bring it upwards and around the sides of the tin! Then melt your chocolate spread. I sit it in a jug of boiling water but you can heat in the microwave for probably around 20 seconds!

Once melted you just pour it into the cake tin! Then press in your chocolate bar (and buttons if youā€™re using them). I donā€™t bother chopping them up but you can if you like! Make sure theyā€™re covered by the chocolate spread! I then pop it into the fridge for 20 minutes to let it harden a bit! Then take it out of the fridge and pop the rest of the cookie dough on top to create the pie! I tend to flatten it into a disc shape then put it on top! Make sure to seal it and leave no gaps in the dough! I then put the whole thing in the freezer for about an hour! Whilst freezing I preheat the oven to 200Ā°c. Once oven is preheated pop it in for about 30 minutes! I forgot to set a timer on this one to I had to guessšŸ„“šŸ˜‚ Once cooked leave it to cool! Once the tin has cooled I put the pie in the fridge overnight (still in the tin) just to make sure itā€™s fully set! It takes ages!
