How to make healthy meals without meat

Hi all! I'm not necessarily vegetarian but I'm really struggling with the texture of meat suddenly. I can hardly make myself eat it, unless it's in another form like deli meat or a hamburger or shredded chicken in soup. I also can't have dairy because my breastfed baby has an allergy. So, I need help. I have always been a "meat, potatoes, vegetable" meal person. What do I do without meat?! I've been eating way too many carbs and I need to be healthy. Oh, I'm also allergic to all raw fruits and vegetables 🥴🫠

Not a single fruit or vegetable? Like mango, pineapple, kiwi, watermelon, grapes? Because there are a lot of fruits out there that are not just your common apple, banana and orange. Carbs are not an enemy so it will take a shift in you mindset. I do low fat (no oils) high carb and that’s what all the plant based doctors recommend. It’s actually fat that blocks absorption of glucose that causes insulin spikes so taking out the fat solves that issue and we need glucose since that’s what the body runs on. So focus on beans, potatoes, corn, whole grains (rice, oats, etc) and then fruits and vegetables. Examples: pasta marinara with mushrooms, black bean burgers, pancakes, tofu scramble, chili, loaded baked potatoes, soup (tortilla soup, bean and potato soup, split pea soup, minestrone soup), baked homemade French fries, veggie stir fry, baked tofu sandwich, Indian curry, Thai curry, spring rolls, chickpea “tuna” salad sandwich, pizza, baked apple crisp, banana muffins.
