Food help

I’m at my wits end, I literally feel so defeated. My almost 2 year old boy is the world’s pickiest eater. Me and his father work opposite shifts and I’m thankful because we don’t have to put our son in daycare but I truly think this is what’s causing the pickiness. I work day shift and he works second shift, so I’m at work when he wakes up, eats breakfast/lunch and naptime and then I’m home for dinner and bedtime. We are both off on the weekends and I’ll take care of all the food on the weekends. I go crazy always making sure I’m making all kinds of different dinners each night and giving him plenty of different options when I serve him dinner. Even as a smaller toddler he ate everything, I gave him shrimp, chicken, all the veggies, heck he used to sit and eat the container of peas after I made them by the fist full until i would take them away. His dad on the other hand doesn’t cook. His go to is to make chicken tenders and smiley fries in the air fryer and the occasional strawberry/ waffle/ uncrustable. This is what he offers him every single day for lunch. I fight with him constantly and tell him that it stresses me out because I try so hard and he never wants what I give him, he will just resort to the chicken tenders. I have told my boyfriend that I’m going to stop buying them essentially resorting to the “if you don’t eat it you’ll be hungry times” I swear k have tried everything. I have kept him outside playing longer hoping he will be starving and try it. He won’t. I’ve tried offering the better foods with strawberries/things he likes but he only picks those out and then hands me the plate. I stress out about him being hungry but I need to figure something out because I can’t keep doing this 😭 I feel like if I don’t buy them then he can’t give them but what if he just doesn’t eat then? I keep telling my boyfriend I will make up meals for him to offer during the day and then I just never do because by the time bedtime rolls around I’m exhausted. Idk what to do. Someone please give me suggestions/tips? I’m struggling 😭

Hey Mama I can totally relate to this! This is probably the most stressful thing in my life right now LOL I've actually said out loud that if my son could eat whatever I put in front of him whatever was all the meal times everything else would be solvable and I wouldn't worry but this is like my number one worry!! I found this lady on Instagram she seems really great she has some courses and free material I've incorporating little by little some of her methods and they seem to be working. I try to really relax and realize that he will eat whatever he needs to eat my job is only to provide the food . She has some other tips that are tried and true apparently. I'm thinking of getting her course once I get some other stuff out of the way.

I’ve resorted to giving my 22 mo old baby food again so that he is at least getting the nutrients of fruits/veggies.,
