@Destiny my son is allergic to eggs too and we get by with a lot of vegan friendly receipes in addition to including animal based proteins. I really like “scrappy cooking” by Carleigh bodrug because it it’s plant based and gives me and my son a lot of healthy vegan options
Most of our dinners are egg free. We do white bean chicken chili, nacho meat (with tomatoes, onions, and cheese), chicken casserole, pulled pork, toasted turkey, etc. Most pasta is egg-free. You can get regular, gluten free (made from rice flour), red lentil (decent source of iron), chickpea (good for protein and fiber), etc and make it with cheese and veggies, pesto, avocado+spinach+Parm, tomato sauce, broccoli+garlic+oil. We do Greek yogurt mixed with nut butter, fruit, flaxseed, and chia seeds. Pancakes made with Greek yogurt, pureed fruit or veggies, water, and flour. Tons of fresh berries. Sometimes with chia seeds.
