French Fried Onion Pork Chops & Sweet Potato Side
French Onion Chops :
1. In a small mixing bowl combine 1 c plain Greek yogurt (or sour cream), 1 packet of onion soup/ dip mix, 1 tbsp minced garlic, dried herb seasoning, black pepper, and salt.
2. Place pork chops (1-2 per person) in greased baking pan. Evenly spread the mixture on top of each pork chop. Sprinkle French fried onions over each pork chop.
3. Bake at 400°F for 20-30 minutes.
Roasted Sweet Potatoes :
1. Chop 2-4 sweet potatoes into bite sized pieces.
2. Toss sweet potatoes, broccoli (preferably frozen), cauliflower (preferably frozen), avocado oil, garlic powder, paprika, dried herb seasoning, black pepper, and salt on a sheet pan.
3. Bake at 400°F for 20-30 minutes.
I love that these can be baked at the same time, are quick to prepare, and the savory with sweet flavors balance each other out so well. This is a fall time favorite meal we never get tired of. Swap the pork chops with chicken breast for an equally delicious alternative.
