Easy healthy party food ideas

Does anyone have ideas for easy party food ideas that are healthy and low carb? My husbands family all eats low carb/keto and several of my sons friends parents are vegan as well as low carb. Last year I ordered 10 pizzas for his 2nd birthday party and 7 were wasted. Pretty much only the kids ate the pizza and my immediate family. Also spent a lot on snack items (chips/dips, cookies, crackers, pretzels, cupcakes etc) that were untouched. Chicken, fruit and salad was all that was really eaten. I plan to have a charcuterie board with meat, cheese, nuts, pretzels, olives and fruit but I'm worried this isn't substantial enough for a meal. It will be about 35 people, about 30 are adults. Does anyone know any easy but healthy party food ideas? I won't be able to cook for the event so it must be something I can get from a store or restaurant. Venue doesn't have a fridge or anything to heat the food but I will be bringing a cooler. Thanks in advance for any ideas.

Charcuterie board (meat, cheese, crackers), fruit & veggies with dips & im sure there’s tons of low carb/vegan cake/cupcake recipes

Sounds great. Just add in some Crackers for the charcuterie board! You could also do small sandwiches or wraps. Have a veggie and fruit tray. It's your party so don't go crazy on pleasing everyone.

What about like a 5 layer dip? Beans, salsa, cheese (can use vegan cheese), sour cream, green onions. You can serve it either with chips or raw veggies like celery, carrot sticks, or pepper slices.
