How do we serve cucumbers to our little ones now?

My son has an issue with texture and so he refuses to eat pretty much all fruit, I’m slowly finding ways to get fruit into him and bypassing his sensory issues however cucumbers I’m unsure about. How can they be served for our aged toddlers now? I feel if he can hold it in his had without it feeling slimy (so skin on one side) like a wedge or similar, then I may have more success but I’m unsure if that’s safe? If I do a thin slither, the texture is too much for him and he won’t even attempt to bring it to his mouth.. I don’t know any forms it will be okay! I tried thin rounds and too much inside is exposed still🤦🏽‍♀️
