Have a look at the Solid Starts app. It tells your the age appropriate way to serve food x
Try cooked carrot batons or maybe slices of avocado. It’s softer so will slip down easier

Remember gagging is not choking. Gagging is a good way for them to learn how much then can swallow. Although it’s horrible to see
I was the same as you but she’s actually so much better than expected. My health visitor told me more chance of us chocking them then as there gag reflex is so sensitive they stop themselves. Which when he gags it’ll be scary but good as that’s him getting used to things. I have started with toast and have tried all sorts now sausages, vegs. Keep going and don’t forget your anxiety will rub off on him if you pretend to be cool and calm he will just bite and chew and do it xx
