My little one likes to do it all herself, so you could just leave the spoon on the tray and see what happens? Or pop some puree in a bowl/on the tray to play with. It’s as much about exploring textures as it is eating…
My little one much prefers being able to control it herself mother-in-law tried to spoon feed her a yoghurt and she point blank refused when I said give her the spoon preloaded she went feral for it. Maybe try offering preloaded spoons but give him the opportunity to do it himself.

Like other people are saying my son seems to prefer to feed himself but I load the spoon for him. I also just put whatever it is on the tray or smear it round the outside of the bowl and he plays and tastes the food that way instead
I’ve never done puree but my first basically didn’t eat anything of note till 9/10 months and my second was more into it but for some reason couldn’t swallow food till 9 months. My third is weirding me out that she can and does actually EAT food. I’d just put food in front of him while you’re eating and let him figure it out
Could be a sign he's not ready yet. I wouldn't force it. My girl only does this when she dislikes food but will eventually take it. Try again after a while and see or offer finger foods it might be that he wants to eat himself so maybe baby led weaning?
